Our choice: A crunchy Côtes d’Auxerre, the little brother of Chablis, by Patrick Piuze is rarely seen on these shores and would be a great match for one of the specials like Hotto ebi ramen! Or go crazy with the sake set – Shōyu boasts quite an impressive array of sakes!
