Monte Pacis

Within the 17th-century walls of Pažaislis Monastery, Monte Pacis balances baroque grandeur with modern sensibility. Chef Raimundas Dambrauskas turns Lithuanian ingredients into elegant, contemporary plates – the kind that prove local produce can hold its own on any fine-dining stage.

Sommelier and owner Indra Ramanauskienė has turned the wine list into something between a confession and a collector’s notebook. Each label earns its place, from monastery cellars to modern vineyards, stitched together with curiosity and respect. It’s the kind of list you don’t skim while ordering – you end up reading it like a very good book, glass in hand.

Our choice: With a wine list as complex and unique as at Monte Pacis, it would be a sin not to enjoy mature & rare bottles – so how about Benanti’s Nerello Cappuccio at 20 years of age for the main course, and 1997 Dr. Bürklin-Wolf Ruppertsberger Gaisböhl Riesling “R” Auslese for dessert?
