John Chef’s Hall, the latest Michelin star recipient in Riga, boasts an impressive wine & drinks list compiled by the talented Beverage Director and Sommelier Katrīna Svilāne.

Here the fine dining doesn’t shout – it hums. Chef Kristaps Sīlis conducts his kitchen like a quiet orchestra, turning Latvia’s land and seasons into a symphony of flavour.

Katrīna Svilāne has built a drinks program that doesn’t sit on the sidelines. Whether it’s a well-chosen Chardonnay or a cocktail that rewrites the rules, this is where the wine list and the bar feel like partners in crime. Thoughtful pairings weave the menu together, each glass amplifying what’s on the plate without stealing the spotlight.

John Chef’s Hall recommends: Chanterelle Martini – a true gastronomic flirtation where Polish rye vodka meets French chanterelles, Baltic maple, and a touch of Sauternes; and Leclaire-Thiefaine Cuvée 03 Constantin Le Grand Cru de Cramant Extra Brut – Champagne with personality and precision.

Our choice: Plenty of well-priced beauties here (possibly the best value among Michelin-starred restaurants in the Latvian capital?); we’d start the evening with the uniquely Latvian Chanterelle Martini and then continue with value-for-money gems from the wine list like 2020 François Chidaine Baudoin and 2017 Bressan Schioppettino!
